Is Facetime being recorded and data-mined by the likes of Facebook and Google?
Is there is any degree of even possibility that the answer is “yes” do you know of a secure and encrypted way to do video-conferencing?

Fortunately, the answer to your first question is “no.” Apple does not record your FaceTime calls. And, FaceTime calls are end-to-end encrypted. They can’t be intercepted in transit.
